If you make these muffins once, they will become your go-to favorite. When I happened upon this recipe, the thought of chocolate chips and bananas did not sound all that great, but I gave them a shot. Oh my goodness! I have made these on a regular basis since. They are perfect with your first cup of coffee in the morning, one in the lunch bag for a bonus, and everyone we know loves getting a bag of them “just because”! The best part, they get moister every day…if they last that long.
As I was writing, and Eliza visited Deb’s Mugs and Muffins….a shop that I would love to own, so I took the opportunity to name it after myself…if you have met her in the book, she probably really is me… I thought these muffins would be a perfect match with her freshly brewed coffee from her gourmet roasted beans. I hope you enjoy them as much as we do!

CHOCOLATE CHIP BANANA MUFFINS
1 cup butter, melted 2 ¼ cups flour
1 ¼ cups sugar ¼ tsp salt
1 large egg 1 tsp baking powder
4 ripe bananas 1 tsp baking soda
2 Tbsp instant coffee 1 cup good dark chocolate chips
1 tsp pure vanilla
Preheat oven to 350 degrees
Line 18-24 muffin cups with liners
Beat bananas until mashed, add sugar and butter and blend well. Add egg, instant coffee, and vanilla. Mix until well combined.
In a separate bowl, combine flour, salt, baking soda and baking powder. Whisk to blend, add chocolate chips to flour mixture and whisk again to coat chips.
Turn mixer off, add dry ingredients at once. Turn mixer on low and mix to combine. Do not over blend.
Spoon into lined muffin cups, filling to top.
Bake 22-24 minutes. Toothpick test for doneness. Cool in pan 5 minutes. Store covered.
