Apples are Eliza’s favorite year-round, but in the fall, she loves to bake with them. One of her favorite recipes that were handed down through the years is what Mimzie called a Windfall Cake. Eliza was not always able to get Windfall apples, so she made a few changes to make this recipe her own.
If she is lucky enough to have any leftover, it makes a wonderful start to the day with her first cup of coffee on the porch.
GOOD OLE’ DAYS APPLE CAKE
1-2/3 cup flour 3 cups apples, cored and finely chopped
Pinch salt 1 ½ tsp baking powder
1 cup walnuts, finely chopped
¾ cup butter, room temp additional sugar for dredging
½ cup sugar
1 tsp cinnamon
2 eggs, slightly beaten
PREHEAT OVEN TO 350˚
Grease and flour cake pan of choice
Combine flour, baking powder and salt in large bowl. Rub in butter until resembles coarse crumbs. Stir in sugar, cinnamon, and nuts. Carefully fold in apples. Last, stir in eggs with metal spoon until thoroughly amalgamated.
Place batter in prepared 8” cake pan or Bundt pan. Bake 50 minutes or until toothpick comes out clean.
Cool in pan 10 minutes. Turn out, dredge with additional sugar.
This cake gets moister by the day. (Chopping nuts and apples in a food processor works well for this recipe. Apples can be peeled or left unpeeled, as desired.)
