Many times, I’ve found myself using the phrase ‘baking up a storm’. Well, this evening I was actually ‘baking in a storm’!!! Wanting a really good cookie for a week now, with storm warnings all about, whitecaps on the pond and things blowing around the yard, I certainly couldn’t go outside. That’s when the ‘Aunt Mildred’ within kicked in and we tweaked my favorite oatmeal cookie recipe. I’m thrilled to share it with you. They really are good guys!!!
Preheat oven to 350
2 – sticks butter 1-1/2 cup flour
1 c brown sugar, packed 1 tsp baking soda
½ c sugar 2 tsp cinnamon
2 eggs ½ tsp salt, optional
1 tsp pure vanilla 2 ½ c oats
1 c dried blueberries ½ c chopped pecans
1 c white chocolate chips ¾ c cocoanut
Cream butter, sugars and vanilla. Add eggs and stir until combined.
In separate bowl combine flour, baking soda, cinnamon, salt, blueberries, white chocolate chips, cocoanut, & pecans. Stir to mix and completely coat the berries & chips. Stir in oats.
Add to butter/sugar mixture, and stir to combine.
Place heaping tablespoons full or medium size cookie scoop on ungreased cookie sheets, 12 to a sheet.
Bake 12 minutes or until golden. Let stand on cookie sheet 5 minutes before you remove to wire rack to cool.
