El & Em postponed their meeting to go over the Wedding Menu until Sunday afternoon. They had a busy schedule, cleaning out parts of the garden, and getting things lined up for their upcoming fall activities. Even though school just started, it would be here before they knew it. Their pumpkin patch was doing nicely and they had a good assortment of gourds that would be perfect for decorating. They were ready to revamp the inside of the market to give it that festive feel.
…so to make up for the postponement, Em baked up a batch of ‘Pumpkin Pecan Spice Scones with Cream Cheese Glaze’ to bring to Slipknot and serve with the fresh pot of coffee she knew Eliza would have waiting…
Pumpkin Pecan Spice Scones with Cream Cheese Glaze
Preheat oven to 400 degrees Makes 12 scones
Scones:
3 cups flour 2/3 cup packed brown sugar
2 ½ tsp baking powder ½ tsp baking soda
½ tsp salt 1 ½ tsp cinnamon
½ tsp fresh grated nutmeg ¼ tsp ground ginger
1 ½ sticks cold butter, cubed 1 cup cream or buttermilk
1 cup pumpkin puree 1 Tbsp pure vanilla
½ cup coarsely chopped pecans
Glaze:
4 Tbsp butter, room temp 4 Tbsp cream cheese, room temp
1 ½ cup powdered sugar 1 tsp pure vanilla
¼ tsp cinnamon 3 to 4 Tbsp milk
- Line baking sheet with parchment paper and set aside.
- Whisk together flour, brown sugar, baking powder, baking soda, salt, all spices. Add the cold butter cubes and toss to coat. Working with fingers or pastry cutter, work butter into flour mixture until size of small peas.
- Whisk buttermilk (or cream), pumpkin puree and vanilla in small bowl.
- Add wet ingredients to dry all at once. Stir together until combined. Add pecans and stir until no dry flour bits remain.
- Pat dough into circle, about 1 ½ inches thick. Cut with 2” cutter and place on parchment lined baking sheet, leaving space between.
- Bake 15 – 18 minutes until lightly browned. Allow to cool before glazing.
- For the glaze, whisk together all ingredients, adding only 2 Tbsp milk to begin. Add more milk as necessary until desired consistency.
- Generously drizzle each scone when cooled.
